Description

Ingredients

  • 3 ripe bananas
  • mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • beaten
  • 3/4 cup sugar
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon nutmeg (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin or line it with muffin cups.
  2. In a mixing bowl, combine the mashed bananas and melted butter.
  3. Stir in baking soda and salt.
  4. Mix in vanilla extract and beaten egg.
  5. Add sugar and mix until well combined.
  6. Fold in flour until just incorporated. Do not overmix.
  7. If using, fold in chopped walnuts or pecans, cinnamon, and nutmeg.
  8. Spoon the batter into muffin cups, filling each about 2/3 full.
  9. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before serving.

Notes

For a richer flavor, use dark brown sugar instead of white sugar. These muffins can be stored in an airtight container for up to 3 days.
