These Moist Banana Bread Muffins are a delightful treat, perfect for breakfast or a snack. Made with ripe bananas, they’re incredibly soft and fluffy with a hint of sweetness.

- 3 ripe bananas
- mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon vanilla extract
- 1 large egg
- beaten
- 3/4 cup sugar
- 1 cup all-purpose flour
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon nutmeg (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin or line it with muffin cups.
- In a mixing bowl, combine the mashed bananas and melted butter.
- Stir in baking soda and salt.
- Mix in vanilla extract and beaten egg.
- Add sugar and mix until well combined.
- Fold in flour until just incorporated. Do not overmix.
- If using, fold in chopped walnuts or pecans, cinnamon, and nutmeg.
- Spoon the batter into muffin cups, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
For a richer flavor, use dark brown sugar instead of white sugar. These muffins can be stored in an airtight container for up to 3 days.
