Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk the eggs, then add the buttermilk and melted butter. Mix until combined.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. A few lumps are fine; do not overmix.
  4. Heat a large skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. Pour about ¼ cup of batter onto the hot skillet for each pancake.
  6. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look dry.
  7. Flip and cook for another 1–2 minutes, until golden brown and cooked through.
  8. Repeat with the remaining batter, lightly greasing the skillet as needed.

Notes

  • Do not overmix the batter; small lumps help keep the pancakes fluffy.
  • If using frozen blueberries, fold them gently into the batter just before cooking.
  • For a buttermilk substitute, mix 1 tablespoon lemon juice or vinegar with 1 cup milk and let it stand for 5 minutes.
  • Keep cooked pancakes warm in a 200°F (93°C) oven while preparing the remaining batches.
