Description
This Moroccan Pumpkin & Chickpea Stew is a hearty and flavorful dish packed with spices, vegetables, and protein-rich chickpeas, perfect for any occasion.
Ingredients

- 1 tablespoon coconut or olive oil
- or 1/4 cup water
- 1 yellow onion
- diced
- 4 cloves garlic
- minced
- 1 inch knob of ginger
- grated or minced
- 2 teaspoons cumin
- 2 teaspoons coriander
- 1 teaspoon cinnamon or 1 cinnamon stick
- good pinch of red pepper flakes
- 2 carrots
- diced
- 2 small sweet potatoes
- cubed
- 1 small sugar pumpkin (about 3 –4 cups)
- cubed
- 1 can (28 oz) stewed tomatoes
- 3 cups cooked chickpeas or 2 cans (15oz)
- drained and rinsed
- 3 cups vegetable broth or water
- 1/4 cup raisins
- mineral salt & fresh cracked pepper
- to taste
- few large handfuls baby kale or spinach
- chopped
- lemon or lime wedges
- to serve
- cilantro
- to garnish
Instructions
- In a large pot, heat the coconut or olive oil (or water) over medium heat. Add the diced onion, and sauté until translucent.
- Add the minced garlic, grated ginger, cumin, coriander, cinnamon, and red pepper flakes. Cook for 1-2 minutes until fragrant.
- Stir in the diced carrots, sweet potatoes, and cubed pumpkin. Cook for another 5 minutes.
- Pour in the stewed tomatoes, cooked chickpeas, vegetable broth, and raisins. Season with salt and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in the kale or spinach during the last few minutes of cooking until wilted.
- Serve hot, garnished with cilantro and lemon or lime wedges.
Notes
For a spicier kick, add more red pepper flakes or a dash of cayenne pepper. This stew can be stored in the refrigerator for up to 4 days.
