  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen mulberries
  • 1/3 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until well mixed. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the softened cream cheese with 3/4 cup sugar until smooth and creamy. Add the eggs, one at a time, mixing well after each addition.
  4. Incorporate the sour cream and vanilla extract, mixing until just combined.
  5. Pour the cheesecake filling over the prepared crust in the springform pan and smooth the top.
  6. Bake in the preheated oven for 30 minutes, or until the center is set but still slightly jiggly.
  7. While the cheesecake cools, prepare the mulberry topping by combining mulberries, 1/3 cup sugar, lemon juice, and cornstarch with water (if using) in a saucepan. Cook over medium heat until the mixture simmers and thickens slightly.
  8. Allow the toppings to cool, then spread it evenly over the cooled cheesecake.
  9. Chill the cheesecake in the refrigerator for at least 4 hours or overnight before slicing and serving.

Notes

Make sure to let the cheesecake cool completely before topping it with mulberries for the best texture. For a thicker topping, add cornstarch as indicated.
