- 2 cups fresh or frozen mulberries

- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon water
Instructions
- Preheat your oven to 325°F (165°C).
- In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter until well mixed. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the softened cream cheese with 3/4 cup sugar until smooth and creamy. Add the eggs, one at a time, mixing well after each addition.
- Incorporate the sour cream and vanilla extract, mixing until just combined.
- Pour the cheesecake filling over the prepared crust in the springform pan and smooth the top.
- Bake in the preheated oven for 30 minutes, or until the center is set but still slightly jiggly.
- While the cheesecake cools, prepare the mulberry topping by combining mulberries, 1/3 cup sugar, lemon juice, and cornstarch with water (if using) in a saucepan. Cook over medium heat until the mixture simmers and thickens slightly.
- Allow the toppings to cool, then spread it evenly over the cooled cheesecake.
- Chill the cheesecake in the refrigerator for at least 4 hours or overnight before slicing and serving.
Notes
Make sure to let the cheesecake cool completely before topping it with mulberries for the best texture. For a thicker topping, add cornstarch as indicated.
