Description

This delightful Italian Ricotta & Fig Crostata features a buttery shortcrust pastry filled with creamy ricotta cheese and topped with sweet figs and fig jam, making it a perfect dessert for family gatherings.


Ingredients

  • 1¼ cups all-purpose or ’00’ flour
  • ½ cup cold unsalted butter cubed or ¼ cup olive oil for lighter version
  • ⅓ cup granulated sugar
  • 1 whole egg + 1 egg yolk cold
  • Pinch of fine salt
  • 1 tsp lemon zest optional
  • 1 cup ricotta cheese well-drained
  • 2 tbsp granulated sugar adjust to taste
  • 1 tsp finely grated lemon zest
  • 2 tbsp whipped cream optional for extra silkiness
  • 34 tbsp fig jam or dried-fig jam
  • 56 fresh ripe figs sliced into wedges
  • 2 tbsp almond slivers optional
  • 1 tbsp honey or light glaze for shine
  • Powdered sugar for dusting optional

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, sugar, and salt. Cut in cold butter (or olive oil) until the mixture resembles coarse crumbs.
  3. Add the whole egg, egg yolk, and lemon zest (if using). Mix until the dough comes together. Wrap in plastic and chill for 30 minutes.
  4. After chilling, roll out the dough and fit it into a tart pan. Prick the bottom with a fork and pre-bake for 10 minutes.
  5. In another bowl, mix ricotta, sugar, and lemon zest until smooth. If desired, fold in whipped cream for added silkiness.
  6. Pour the ricotta mixture into the pre-baked crust and smooth it out.
  7. Top with fig jam, fresh fig wedges, and almond slivers (if using).
  8. Drizzle with honey for shine and bake for an additional 20 minutes or until set.
  9. Allow to cool, dust with powdered sugar if desired, and slice to serve.

Notes

For a lighter version, substitute cold unsalted butter with olive oil. Ensure the ricotta is well-drained for the best texture.
