These My Favorite Apple Pie Bars combine the wonderful flavors of apple pie into a convenient bar form, perfect for sharing or enjoying as a sweet treat any time of the day.

- 2 lbs apples 900 – 950 g / 5 – 6 apples (honey crisp and granny smith)
- 50 g white sugar ¼ cup
- ½ tsp sea salt
- 2 tsp vanilla
- 2 tbsp lemon juice
- zest from 1 lemon
- 45 mL rum or brandy or calvados 3 tbsp (or apple cider)
- 20 g cornstarch 2 packed tbsp
- 100 g white sugar ½ cup (for caramel)
- 50 g unsalted butter 3.5 tbsp
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp cloves
- ½ tsp ground cardamom
- ½ tsp ground ginger
- 130 g unsalted butter 9 tbsp (softened)
- 130 g white sugar ⅔ cup
- ¼ tsp sea salt
- 1 tsp vanilla
- 160 g AP flour 1 ¼ cup (spooned and leveled)
- ½ tsp cinnamon (optional)
- ½ tsp ground ginger (optional)
- 115 g unsalted butter ½ stick / 8 tbsp (chilled and cubed)
- 100 g white sugar ½ cup
- ¼ tsp sea salt
- 94 g AP flour ¾ cup (spooned and leveled)
- 50 g rolled oats
- 40 g chopped pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- For the apple filling, peel, core, and slice the apples. In a large bowl, combine apples, 50 g white sugar, sea salt, vanilla, lemon juice, zest, rum or cider, cornstarch, and spices; mix well.
- For the shortbread crust, beat together 130 g unsalted butter, 130 g white sugar, sea salt, and vanilla until creamy. Gradually mix in flour and spices until combined.
- Press the shortbread mixture into the bottom of the prepared pan and bake for 15-20 minutes, or until lightly golden.
- While the crust bakes, prepare the pecan and oat crumble topping by mixing together chilled butter, 100 g white sugar, sea salt, flour, oats, and pecans until crumbly.
- Once the crust is done, layer the apple mixture on top, then sprinkle the crumble mixture evenly over the apples.
- Bake for an additional 25-30 minutes, or until the filling is bubbly and the topping is golden brown.
- Allow to cool before cutting into bars and serving.
Notes
Feel free to mix different types of apples for varied flavor. Serve warm or at room temperature for the best taste.
