Ingredients

  • 1 baked pastry shell (quiche or pie pan)
  • 4 to 6 beefsteak tomatoes
  • peeled and cut into thin slices
  • Salt and pepper
  • to taste
  • 1 tablespoon fresh chopped basil
  • or 1 teaspoon dried basil
  • 2 tablespoons chopped chives
  • 1/2 cup mayonnaise
  • 1 cup of grated cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Layer the sliced tomatoes in the baked pastry shell, seasoning with salt, pepper, fresh basil, and chives.
  2. In a bowl, mix the mayonnaise and grated cheese until well combined. Spread this mixture over the layered tomatoes and bake for 30 minutes, or until golden and bubbly.

Notes

For an extra kick, add a pinch of cayenne pepper to the cheese mixture. Allow the pie to cool slightly before slicing for easier serving.
