- 1 1/2 cup milk of choice
- 6 tbsp chia seeds
- 2 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup blueberries
- plus more for topping
- 1 nectarine
- chopped
- 1/2 tsp cinnamon
- honey drizzle on top
Instructions
- In a bowl, combine milk, chia seeds, maple syrup, and vanilla extract. Stir well to ensure chia seeds are evenly distributed.
- Add in the blueberries, chopped nectarine, and cinnamon. Mix until combined.
- Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to thicken.
- Once set, stir the pudding then serve in bowls, topped with additional blueberries and a drizzle of honey.
Notes
For a thicker pudding, use more chia seeds. Feel free to substitute the milk with any non-dairy alternatives.
