Delight in this creamy Nectarine and Blueberry Chia Pudding, a nutritious and refreshing dessert that’s perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cup milk of choice
  • 6 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 cup blueberries
  • plus more for topping
  • 1 nectarine
  • chopped
  • 1/2 tsp cinnamon
  • honey drizzle on top

Instructions

  1. In a bowl, combine milk, chia seeds, maple syrup, and vanilla extract. Stir well to ensure chia seeds are evenly distributed.
  2. Add in the blueberries, chopped nectarine, and cinnamon. Mix until combined.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to thicken.
  4. Once set, stir the pudding then serve in bowls, topped with additional blueberries and a drizzle of honey.

Notes

For a thicker pudding, use more chia seeds. Feel free to substitute the milk with any non-dairy alternatives.
