Deliciously moist and fluffy nectarine muffins, perfect for breakfast or a snack.

- 1.5 cups all-purpose flour
- 0.5 cup granulated sugar plus 1 tablespoon for topping
- 1.5 tsp baking powder
- 0.5 tsp salt
- 0.5 tsp ground cinnamon plus 0.25 teaspoon for topping
- 0.5 cup whole milk
- 0.25 cup vegetable oil
- 1 large egg room temperature
- 1 tsp vanilla extract
- 2 medium nectarines diced into 1/2-inch pieces
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, 0.5 cup sugar, baking powder, salt, and 0.5 tsp cinnamon.
- In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the diced nectarines.
- Spoon the batter into the prepared muffin tins, filling each about 2/3 full. Sprinkle the remaining tablespoon of sugar and 0.25 teaspoon of cinnamon on top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes in the tin before transferring to a wire rack.
Notes
For an extra touch, you can add some chopped nuts or a glaze on top once cooled.
