Nectarine Muffins

Description

Deliciously moist and fluffy nectarine muffins, perfect for breakfast or a snack.


Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar plus 1 tablespoon for topping
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon plus 0.25 teaspoon for topping
  • 0.5 cup whole milk
  • 0.25 cup vegetable oil
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • 2 medium nectarines diced into 1/2-inch pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, 0.5 cup sugar, baking powder, salt, and 0.5 tsp cinnamon.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the diced nectarines.
  5. Spoon the batter into the prepared muffin tins, filling each about 2/3 full. Sprinkle the remaining tablespoon of sugar and 0.25 teaspoon of cinnamon on top.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool for a few minutes in the tin before transferring to a wire rack.

Notes

For an extra touch, you can add some chopped nuts or a glaze on top once cooled.
