These No-Bake Pumpkin Pie Energy Balls are a delicious and nutritious snack perfect for fall. Packed with flavors of pumpkin and warm spices, they are easy to make and require no baking!

- 1 1/2 cups old-fashioned oats
- 1/2 cup pumpkin puree
- 1/3 cup nut butter (peanut

- or cashew)
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons pumpkin pie spice
- 1 tablespoon chia seeds (optional)
- 1/4 cup mini chocolate chips or chopped nuts (optional)
Instructions
- In a large mixing bowl, combine the old-fashioned oats, pumpkin puree, nut butter, maple syrup, vanilla extract, pumpkin pie spice, and chia seeds if using.
- Mix until well combined. If desired, fold in mini chocolate chips or chopped nuts.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set.
- Once set, store them in an airtight container in the refrigerator for up to a week.
Notes
Feel free to adjust the sweetness by adding more or less maple syrup to suit your taste. These energy balls can also be frozen for longer storage.
