- 6 oz. Maria cookies crushed
- ½ stick butter (4 tbsp) melted
- 1 package lemon jello powder (3 oz.)
- ¾ cup boiling water
- 8 oz. cream cheese softened
- 1 cup powdered sugar
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 package berry jello powder (3 oz.)
- ¾ cup boiling water
- ½ cup ice cubes
- 1 package strawberry jello powder (3 oz.)
- ¾ cup boiling water
- ½ cup ice cubes
Instructions
- In a bowl, combine the crushed Maria cookies with melted butter and press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In another bowl, dissolve the lemon jello powder in ¾ cup of boiling water. Let it cool slightly.
- In a large mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar, sour cream, and vanilla extract. Mix until creamy and well combined.
- Slowly pour in the slightly cooled lemon jello mixture and mix until fully incorporated.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture. Pour this cheesecake filling over the crust and smooth the top. Refrigerate for at least 2 hours to set.
- Prepare the blue jello layer by dissolving the berry jello powder in ¾ cup of boiling water. Add ½ cup of ice cubes and stir until the ice has melted. Once the cheesecake layer is set, carefully pour the blue jello over the cheesecake and return to the fridge until fully set, about 1 hour.
- For the red jello layer, repeat the process with the strawberry jello powder, boiling water, and ice cubes. Allow it to cool slightly before gently pouring it over the blue jello layer. Chill until fully set, about 1 hour.
- Once all layers are set, carefully remove the sides of the springform pan. Slice and serve chilled.
Notes
Make sure to let each layer set properly in the fridge before adding the next layer for a clean look. You can also decorate with fresh berries for extra flair.
