- 1 cup soft caramel candies about 20 pieces
- 2 tablespoons milk or heavy cream for richer flavor
- 1 cup semi-sweet chocolate chips
- 1 teaspoon coconut oil or butter
- ¼ teaspoon vanilla extract
- Pinch of salt
Instructions
- Toast the shredded coconut in a skillet over medium heat until golden brown, stirring frequently.
- In a saucepan, combine the caramel candies and milk or cream, heating over low until melted and smooth.
- Remove from heat and stir in the toasted coconut and vanilla extract until fully combined.
- Spoon the mixture into small mounds on a lined baking sheet and refrigerate until set.
- Melt the chocolate chips with coconut oil in a microwave-safe bowl, stirring until smooth.
- Dip the cooled cookie mounds in the melted chocolate, then return to the baking sheet and chill to set the chocolate.
Notes
For best results, allow the caramel mixture to cool slightly before adding the coconut to prevent burning your hands. Adjust chocolate coating to preference.
