This No Bake S’mores Ice Cream Cake is a deliciously easy dessert that combines the flavors of classic s’mores with creamy ice cream. Perfect for summer parties or anytime you crave a sweet treat!

- 2 cups graham cracker crumbs
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar
- 1/2 cup melted butter
- 2 cups mini marshmallows
- 2 cups chocolate ice cream
- 2 cups vanilla ice cream
- 1/2 cup chocolate syrup
- 1/2 cup mini chocolate chips
Instructions
- In a large bowl, combine the graham cracker crumbs, cocoa powder, sugar, and melted butter until well mixed.
- Press half of the mixture into the bottom of a 9-inch springform pan to form the crust.
- Spread the chocolate ice cream evenly over the crust and let it soften slightly if needed.
- Layer the mini marshmallows over the chocolate ice cream.
- Spread the vanilla ice cream on top of the marshmallows, smoothing it out with a spatula.
- Drizzle chocolate syrup over the vanilla ice cream and sprinkle mini chocolate chips on top.
- Top with the remaining graham cracker mixture and press down gently.
- Cover and freeze the cake for at least 4 hours or until firm. Remove from the springform pan before serving.
Notes
For best results, let the cake freeze overnight. You can also customize your toppings with additional nuts or flavored syrups.
