Ingredients
1 tablespoon olive oil
1 clove garlic
grated
2 zucchini
grated
1 teaspoon dried oregano
salt and ground black pepper to taste
½ cup shredded Mexican cheese blend (such as Great Value Fiesta Blend)
or more to taste
2 tablespoons grated Parmesan cheese
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil and grated garlic.
- Add the grated zucchini and dried oregano, season with salt and pepper, and mix until well combined.
- Stir in the shredded Mexican cheese blend and Parmesan cheese.
