Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, mix together the almond flour, coconut flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- In another bowl, whisk the eggs, melted coconut, applesauce, erythritol, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the grated carrots, shredded coconut, and chopped walnuts if using.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the frosting, beat the cream cheese and softened coconut together until creamy. Gradually add the powdered erythritol and vanilla extract, mixing until smooth.
