- 2 ½ cups all-purpose flour
- 4 tablespoons white sugar
- divided
- 1 teaspoon salt
- 1 cup shortening
- 1 large egg
- ¼ cup cold water
- 1 tablespoon butter
- melted
- 3 pounds fresh peaches – peeled
- pitted
- and sliced
- ¾ cup orange juice
- ¼ cup lemon juice
- ½ cup butter
- 2 cups white sugar
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
Instructions
- In a large bowl, combine flour, 2 tablespoons sugar, and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in egg and cold water until dough forms.
- Divide dough in half, roll out one half to fit a 9×13 inch baking dish. Place in dish and set aside.
- In another bowl, mix sliced peaches with orange juice, lemon juice, remaining sugar, cornstarch, cinnamon, and nutmeg.
- Pour the peach mixture over the crust in the baking dish. Dot with butter.
- Roll out the second half of dough and place it over the filling. Seal the edges and cut slits in the top for steam to escape.
- Bake at 350°F (175°C) for about 30 minutes, or until the crust is golden brown.
