Ingredients

  • 3 can peaches in lite syrup 29 ounces each
  • ½ cup salted butter
  • 1 cup granulated sugar plus more if needed
  • ½ teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon pure vanilla extract
  • 3 teaspoons all-purpose flour
  • 2 ½ cups all-purpose flour
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 cup very cold unsalted butter cut in cubes
  • ½ cup very cold water
  • 1 egg beaten with 1 teaspoon of water
  • Ground cinnamon for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a saucepan, combine the canned peaches (with syrup), butter, sugar, cinnamon, nutmeg, vanilla extract, and flour. Cook over medium heat until the mixture is bubbly.
  3. In a mixing bowl, whisk together the flour, sugar, and salt for the pie crust. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gradually add the cold water to the flour mixture, stirring until you can form a dough. Divide the dough in half.
  5. Roll out one half of the dough and fit it into the bottom of the prepared baking dish. Pour the peach filling over the crust.
  6. Roll out the second half of the dough and place it over the peach filling. Seal the edges and cut slits for steam to escape.
  7. Brush the top crust with the beaten egg and sprinkle with ground cinnamon.
  8. Bake for 30 minutes or until the crust is golden brown. Allow to cool slightly before serving.

Notes

For fresh peaches, peel and slice about 6-8 ripe peaches. Adjust sugar based on the sweetness of the peaches used.
