- 1/2 cup water
- 5 cups chopped bok choy
- 20 frozen chicken and vegetable or pork and vegetable dumplings
- 3 tablespoons chopped cilantro
- 1/4 cup thinly sliced green onion
- 2 teaspoons toasted sesame seeds
- chili crunch oil (optional)
Instructions
- In a large skillet or pan, heat the toasted sesame oil over medium heat and add the minced garlic and ginger, sautéing until fragrant.
- Stir in the red curry paste, soy sauce, rice vinegar, coconut milk, and water until combined.
- Add the chopped bok choy and cook for about 3-5 minutes, stirring until it starts to wilt.
- Gently place the frozen dumplings into the pan, ensuring they are submerged in the sauce, cover the pan, and simmer for about 10-12 minutes until the dumplings are heated through.
- Once cooked, remove from heat and garnish with chopped cilantro, sliced green onion, and toasted sesame seeds. Drizzle with chili crunch oil if desired.
