Description

Ingredients

  • 1 pound chicken drumsticks can sub chicken thighs or breasts
  • 2 tablespoon ghee
  • 2 clove garlic minced
  • ⅓ cup fresh oregano chopped
  • 2 teaspoon fresh thyme minced
  • 2 teaspoon fresh sage minced
  • salt & pepper to taste
  • 3.5 cups patty pan squash ends trimmed and quartered

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine ghee, minced garlic, chopped oregano, minced thyme, minced sage, salt, and pepper.
  3. Add the chicken drumsticks to the bowl and mix well to coat the chicken evenly with the herb mixture.
  4. Arrange the coated chicken drumsticks in a single layer on a baking sheet.
  5. Toss the quartered patty pan squash in the remaining herb mixture and scatter around the chicken on the baking sheet.
  6. Bake for 30-35 minutes or until the chicken is cooked through and the squash is tender.
  7. Serve hot, garnished with additional fresh herbs if desired.

Notes

For an extra crispy skin, broil the chicken for the last 2-3 minutes of baking. Make sure not to crowd the pan to ensure even cooking.
