- 1 pound chicken drumsticks can sub chicken thighs or breasts
- 2 tablespoon ghee
- 2 clove garlic minced
- ⅓ cup fresh oregano chopped
- 2 teaspoon fresh thyme minced
- 2 teaspoon fresh sage minced
- salt & pepper to taste
- 3.5 cups patty pan squash ends trimmed and quartered
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- In a large bowl, combine ghee, minced garlic, chopped oregano, minced thyme, minced sage, salt, and pepper.
- Add the chicken drumsticks to the bowl and mix well to coat the chicken evenly with the herb mixture.
- Arrange the coated chicken drumsticks in a single layer on a baking sheet.
- Toss the quartered patty pan squash in the remaining herb mixture and scatter around the chicken on the baking sheet.
- Bake for 30-35 minutes or until the chicken is cooked through and the squash is tender.
- Serve hot, garnished with additional fresh herbs if desired.
Notes
For an extra crispy skin, broil the chicken for the last 2-3 minutes of baking. Make sure not to crowd the pan to ensure even cooking.
