Description

One-Pot Cheesy Beef and Garlic Butter Pasta is the ultimate weeknight comfort meal. Tender pasta noodles cook right in a savory beef broth and milk mixture alongside seasoned ground beef, absorbing every bit of flavor. Finished with a lush garlic-butter melt, cream cheese, sharp cheddar, and grated Parmesan, this rich and cheesy skillet dish delivers restaurant-quality indulgence with minimal cleanup.

Ingredients

Scale

Beef & Aromatics:

  • 2 lbs ground beef (preferably 80/20)

  • 1 tbsp olive oil

  • 1 large yellow onion, finely chopped (about 1 cup)

  • 6 cloves garlic, minced

  • 1 tsp salt

  • ½ tsp freshly cracked black pepper

  • 1 tsp smoked paprika

  • 1 tsp Worcestershire sauce

Pasta & Liquids:

  • 16 oz rotini or penne pasta (or fusilli/farfalle)

  • 4 cups low-sodium beef broth

  • 1 cup whole milk

Butter & Cheese:

  • 4 tbsp unsalted butter

  • 1 cup cream cheese, softened

  • 2 cups shredded sharp cheddar cheese

  • 1 cup freshly grated Parmesan cheese

Herbs & Spices:

  • 1 tbsp dried Italian seasoning

  • ½ tsp red pepper flakes (optional, for a kick)

  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Brown & Season Beef: Heat olive oil and 1 tablespoon of butter in a large pot or Dutch oven over medium-high heat. Add the ground beef and chopped onion. Season with salt, black pepper, smoked paprika, and dried Italian seasoning. Cook for 5–7 minutes, breaking the meat up with a wooden spoon until browned and cooked through.

  2. Sauté Garlic: Push the beef to one side of the pot. Add the minced garlic to the empty space and sauté for 1 minute until fragrant. Stir in Worcestershire sauce to combine with the beef.

  3. Add Liquids & Pasta: Pour in the uncooked rotini pasta, beef broth, and whole milk. Add red pepper flakes if desired. Stir thoroughly to combine and ensure the pasta is submerged in the liquid.

  4. Boil & Simmer: Bring the liquid to a rolling boil over high heat. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and simmer gently for 10–12 minutes (stirring occasionally to prevent the pasta from sticking) until the pasta is al dente and most of the liquid is absorbed.

  5. Melt Butter & Cheeses: Remove the pot from heat. Stir in the remaining 3 tablespoons of butter and cream cheese until completely melted and smooth. Gradually fold in the shredded sharp cheddar and grated Parmesan cheese until melted into a rich, velvety sauce.

  6. Rest & Serve: Cover and let the dish rest for 2–3 minutes off the heat to allow the sauce to thicken slightly. Garnish with chopped fresh parsley and extra Parmesan before serving hot.

Notes

  • Prevent Clumping: For the smoothest sauce, shred your cheddar cheese from a block rather than using pre-shredded cheese, which contains anti-caking agents that hinder melting.

  • Liquid Adjustments: If the pasta absorbs liquid faster than it cooks, splash in an extra ¼ cup of warm beef broth or milk.

  • Storage: Keep leftovers in an airtight container in the refrigerator for up to 3 to 5 days.

  • Reheating: Reheat gently on the stovetop or in the microwave with a splash of milk or broth to restore the creamy texture of the cheese sauce.

  • Variations: Swap ground beef for ground turkey or chicken for a lighter version, or add sautéed mushrooms, bell peppers, or fresh spinach during the last 3 minutes of simmer time.
