- 1 lb smoked sausage
- sliced
- 1 medium onion
- diced
- 1 bell pepper
- diced
- 3 cloves garlic
- minced
- 12 oz penne pasta
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Fresh parsley

Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced sausage and cook until browned.
- Add the diced onion, bell pepper, and minced garlic to the pot. Sauté until the vegetables are softened.
- Stir in the diced tomatoes, chicken broth, penne pasta, Cajun seasoning, paprika, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for about 15 minutes, or until the pasta is cooked and the liquid is mostly absorbed.
- Stir in the heavy cream and cook for an additional 5 minutes until creamy and heated through.
- Serve hot, garnished with grated Parmesan cheese and chopped parsley.

Feel free to adjust the level of Cajun seasoning to your spice preference and add vegetables like spinach or mushrooms for added flavor.
