- 1 pound boneless
- skinless chicken breast (about 2 large chicken breasts)
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cumin
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- 2¼ cups chicken broth
- 1 can (15 oz) nacho cheese sauce
- 1 can (10 oz) Rotel
- 1½ cups uncooked long-grain white rice
Instructions
- In a large pot, heat the olive oil over medium heat and add the chicken breasts. Season with garlic powder, onion powder, cumin, salt, and black pepper. Cook until browned on both sides, about 5 minutes per side.
- Pour in the chicken broth, nacho cheese sauce, and Rotel. Stir in the uncooked rice, making sure everything is well combined.
- Bring to a boil, then cover and reduce the heat to low. Simmer for about 25-30 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat, let it sit for 5 minutes covered, then fluff the rice with a fork and serve.
Notes
For extra flavor, consider adding some chopped bell peppers or jalapeños to the mix. This dish can easily be made ahead and reheated for quick meals.
