  • 6 cups fresh peaches, peeled, pitted, and sliced
  • ¾ cup granulated sugar, divided
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 cup whole milk
  • ½ cup unsalted butter, cold
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp cornstarch or all-purpose flour, for thickening the peach filling
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice, optional

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel, pit, and slice the peaches. Place them in a bowl and toss with ½ cup of the sugar, cornstarch, cinnamon, nutmeg, vanilla, and optional lemon juice.
  3. In a separate bowl, whisk together the flour, remaining ¼ cup sugar, baking powder, and salt.
  4. Add the milk and stir just until combined. Do not overmix.
  5. Place the butter in a baking dish and put it in the preheated oven for a few minutes, until the butter melts.
  6. Carefully remove the dish and pour the batter over the melted butter. Do not stir.
  7. Spoon the peaches and their juices evenly over the batter. Do not stir.
  8. Bake for about 45 minutes, or until the crust is golden brown and a toothpick inserted into the crust comes out clean. The peach filling should be bubbling around the edges.
  9. Let the cobbler cool slightly before serving. Serve warm with vanilla ice cream or whipped cream, if desired.

Notes

  • Fresh peaches are ideal, but canned or frozen peaches can also be used. Drain canned peaches well and thaw and pat dry frozen peaches before using.
  • Adjust the sugar depending on the sweetness of the peaches.
  • For a thicker filling, bake for an additional 5–10 minutes.
  • Bake on the middle oven rack to help prevent a soggy crust.
  • For a gluten-free version, substitute the all-purpose flour with a 1:1 gluten-free baking blend.
