Description

This Overnight No Knead Focaccia is an easy and delicious bread that requires minimal effort and yields a fluffy, flavourful loaf perfect for any occasion.


Ingredients

Scale
  • 500 g all-purpose flour
  • 400 g water at room temperature
  • 3 g instant yeast
  • 9 g sea salt
  • 2 Tbsp unsalted butter softened
  • 6 Tbsp extra virgin olive oil plus more if needed
  • 2 garlic cloves thinly sliced or minced
  • 1/4 tsp black pepper
  • 1 cup chopped herbs basil
  • dill
  • sage and parsley

Instructions

  1. In a large bowl, combine the flour, water, yeast, and sea salt, mixing until just combined.
  2. Cover the bowl with plastic wrap and let it rest at room temperature for 12 to 18 hours.
  3. Once the dough has risen and is bubbly, transfer it to a well-oiled baking sheet.
  4. Gently stretch the dough into the corners of the baking sheet without deflating it.
  5. Brush the top with melted butter and olive oil, then sprinkle with garlic, black pepper, and chopped herbs.
  6. Let the dough rest for another 30 minutes, preheating the oven to 425°F (220°C).
  7. Bake for 25-30 minutes until golden brown.
  8. Allow to cool slightly before slicing and serving.

Notes

For extra flavor, you can experiment with different combinations of herbs. Store leftovers in an airtight container.
