- 7 cups cubed french bread or sourdough
- 6 eggs
- 2 cups milk
- 1 cup pumpkin puree
- 1/4 cup maple syrup
- plus more for topping
- 1 tbsp + 2 tsp pumpkin pie spice
- 1/2 cup brown sugar
- 1/2 cup chopped walnuts
- 2/3 cup finely diced peeled and cored apples
- 1 tsp cinnamon
- 2 tbsp butter
- melted
Instructions
- In a large bowl, whisk together eggs, milk, pumpkin puree, maple syrup, pumpkin pie spice, brown sugar, and cinnamon until well blended.
- Add the cubed bread, walnuts, and diced apples to the egg mixture, stirring gently to coat.
- Transfer the mixture to a greased baking dish, cover with plastic wrap, and refrigerate overnight.
- Preheat oven to 350°F (175°C). Remove the dish from the refrigerator and let it sit at room temperature for about 30 minutes.
- Drizzle the melted butter over the top of the bread mixture and bake for 30-35 minutes, until the top is golden brown and the center is set.
- Serve warm, drizzled with additional maple syrup if desired.
Notes
For extra flavor, consider adding dried cranberries or raisins. This dish pairs well with whipped cream or vanilla ice cream.
