- 2 tablespoons (28ml) olive oil
- 1/4 teaspoon crushed red pepper flakes
- 3 large cloves of garlic finely minced
- 1 pint juicy cherry tomatoes sliced in half
- 1/4 cup (57ml) dry white wine
- 1/2 cup fresh basil finely chopped
- 2 tablespoons (28ml) fresh lemon juice
- 1/2 teaspoon fresh lemon zest
- 1/2 teaspoon salt
- 1 teaspoon granulated sugar
- 1/4 teaspoon fresh ground black pepper
- 2 tablespoons (28ml) olive oil
- 1 and 1/2 pounds fresh cod cut into 4 fillets

Instructions
- In a saucepan over medium heat, warm the olive oil and sauté the crushed red pepper flakes and minced garlic until fragrant.
- Add the sliced cherry tomatoes and cook until they begin to soften, about 3-4 minutes.
- Pour in the white wine, fresh basil, lemon juice, lemon zest, salt, sugar, and black pepper. Simmer for 10-15 minutes until the sauce thickens to your desired consistency.
- While the sauce is simmering, season the cod fillets with salt and pepper.
- In a large skillet, heat the olive oil over medium-high heat and sear the cod fillets for 4-5 minutes on each side, or until golden brown and cooked through.
- Serve the pan-seared cod topped with the tomato basil sauce.
Notes
For a saucier sauce, feel free to add an extra 1/4 cup of white wine. This dish pairs beautifully with a side of rice or crusty bread.
