- 4 (6-ounce) haddock fillets

- Kosher salt

- 1/4 cup all-purpose flour
- 1 1/2 cups panko breadcrumbs
- 3 tablespoons finely chopped fresh parsley
- 2 large eggs
- 3 tablespoons mayonnaise
- 1 1/2 teaspoons Creole seasoning
- or a similar seasoning salt blend
- Lemon wedges
- for serving
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet with cooking spray or a light coat of oil.
- Season the haddock fillets with kosher salt and freshly ground black pepper.
- In a shallow dish, place the all-purpose flour. In another dish, whisk the eggs, mayonnaise, and Creole seasoning together.
- In a third dish, combine the panko breadcrumbs and chopped parsley.
- Dredge each haddock fillet in flour, shaking off the excess, then dip in the egg mixture, and finally coat with the panko mixture.
- Place the coated fillets on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, or until the fish is opaque and the crust is golden brown.
- Serve warm with lemon wedges.
Notes
You can substitute haddock with any firm white fish. Adjust the seasoning to your taste for a flavorful kick.
