  • 4 (6-ounce) haddock fillets
  • defrosted if frozen
  • Kosher salt

  • Freshly ground black pepper

  • 1/4 cup all-purpose flour
  • 1 1/2 cups panko breadcrumbs
  • 3 tablespoons finely chopped fresh parsley
  • 2 large eggs
  • 3 tablespoons mayonnaise
  • 1 1/2 teaspoons Creole seasoning
  • or a similar seasoning salt blend
  • Lemon wedges
  • for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with cooking spray or a light coat of oil.
  2. Season the haddock fillets with kosher salt and freshly ground black pepper.
  3. In a shallow dish, place the all-purpose flour. In another dish, whisk the eggs, mayonnaise, and Creole seasoning together.
  4. In a third dish, combine the panko breadcrumbs and chopped parsley.
  5. Dredge each haddock fillet in flour, shaking off the excess, then dip in the egg mixture, and finally coat with the panko mixture.
  6. Place the coated fillets on the prepared baking sheet.
  7. Bake in the preheated oven for 20-25 minutes, or until the fish is opaque and the crust is golden brown.
  8. Serve warm with lemon wedges.

Notes

You can substitute haddock with any firm white fish. Adjust the seasoning to your taste for a flavorful kick.
