- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/3 cup breadcrumbs
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the yellow squash into rounds and place them in a large bowl.
- Drizzle the olive oil over the squash and sprinkle with garlic powder, black pepper, and half of the Parmesan cheese. Toss to coat.
- Spread the squash evenly on a baking sheet lined with parchment paper.
- In a small bowl, combine the breadcrumbs and the remaining Parmesan cheese.
- Sprinkle the breadcrumb mixture evenly over the squash.
- Bake for 25-30 minutes or until the squash is tender and the topping is golden brown.
- Let it cool slightly before serving.
