Description
A delicious and easy Parmesan Crusted Chicken Sheet Pan Dinner featuring tender chicken breast, roasted red potatoes, and fresh green beans, all cooked on one pan for a convenient meal.

- 1½ lb chicken breast (about 3–4 pieces)
- approx. 1 inch thick
- 2 Tbsp olive oil
- 2 garlic cloves
- minced
- ⅓ cup grated parmesan
- ⅓ cup breadcrumbs
- Italian or plain–can add 1 tsp Italian seasoning to plain breadcrumbs!
- ½ tsp cracked pepper
- ½ – ¾ tsp sea salt
- 2 lb red potatoes
- cut into bite sized pieces
- 1 – 2 garlic clove
- minced
- 2 Tbsp olive oil
- 2 Tbsp grated parmesan
- salt and pepper to taste
- 1 lb fresh green beans
- ends trimmed
- 1 Tbsp olive oil
- 1 garlic clove
- minced
- 1 Tbsp parmesan (optional)
- salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- In a bowl, mix the olive oil, minced garlic, grated parmesan, breadcrumbs, cracked pepper, and salt to create the chicken coating.
- Coat each chicken breast with the parmesan mixture and place them on one side of the prepared sheet pan.
- In another bowl, combine the red potatoes, minced garlic, olive oil, grated parmesan, salt, and pepper. Toss until evenly coated and spread them on the other side of the pan.
- Bake the chicken and potatoes in the preheated oven for 20 minutes.
- While baking, toss the fresh green beans with olive oil, minced garlic, and optional parmesan, salt, and pepper.
- After 20 minutes, remove the pan from the oven, add the seasoned green beans, and return to the oven for an additional 10-15 minutes, or until the chicken is cooked through and the potatoes are tender.
- Allow to cool for a few minutes before serving.
Notes
Feel free to customize the vegetables based on your preference. This dish is best served hot and can be stored in the fridge for up to 3 days.
