Ingredients

  • 2 Tbsp olive oil
  • 2 garlic cloves
  • minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs
  • Italian or plain
  • ½ tsp cracked pepper
  • ½¾ tsp sea salt
  • 2 lb red potatoes
  • cut into bite sized pieces
  • 12 garlic clove
  • minced
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • salt and pepper to taste
  • 1 lb fresh green beans
  • ends trimmed
  • 1 Tbsp olive oil
  • 1 garlic clove
  • minced
  • 1 Tbsp parmesan (optional)
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the olive oil and minced garlic for the chicken. Toss the chicken breasts in this mixture, then coat them with the grated parmesan, breadcrumbs, cracked pepper, and sea salt.
  3. Place the coated chicken breasts on a large baking sheet lined with parchment paper.
  4. In another bowl, mix the red potatoes with olive oil, minced garlic, grated parmesan, salt, and pepper. Spread them out around the chicken on the baking sheet.
  5. In a separate bowl, toss the green beans with olive oil, minced garlic, optional parmesan, salt, and pepper.
  6. After the chicken and potatoes have baked for about 15 minutes, add the green beans to the sheet pan.
  7. Continue baking for an additional 15-20 minutes, or until the chicken is cooked through and the potatoes are tender and golden.
  8. Remove from the oven, allow to cool slightly, and serve warm.

Notes

Ensure the chicken is cooked to an internal temperature of 165°F (74°C). Feel free to customize the vegetables based on your preference or what’s in season.
