Description

This delightful Peach and Nectarine Jam blends the sweetness of peaches with the aromatic flavors of nectarines, creating a vibrant spread perfect for toasts or desserts.


Ingredients

  • 1 kilo peaches
  • 1 kilo nectarines (minus 330 grams stones
  • total net weight 1670 grams)
  • 1550 grams sugar
  • 2 tbsp lemon zest
  • ¼ cup lemon juice
  • 4 fragrant geranium leaves
  • 1 cinnamon stick
  • 67 cloves
  • 1 sachet (25 grams) fruit pectin

Instructions

  1. Wash and pit the peaches and nectarines, then chop them into small pieces.
  2. In a large pot, combine the chopped fruits, sugar, lemon zest, lemon juice, geranium leaves, cinnamon stick, and cloves.
  3. Heat the mixture over medium heat until the sugar dissolves, stirring frequently.
  4. Once dissolved, bring to a boil, then reduce heat and let it simmer for about 30 minutes, skimming off any foam.
  5. Stir in the fruit pectin and boil for an additional 5 minutes until the jam thickens.
  6. Remove from heat, discard the geranium leaves, cinnamon stick, and cloves, then pour the hot jam into sterilized jars.
  7. Seal the jars immediately and allow them to cool completely before storing them in a cool, dark place.

Notes

Ensure that the jars are properly sterilized to prevent spoilage. Feel free to adjust the sugar level to fit your taste preference.
