  • 3 tbsp light brown sugar
  • 1 tsp cinnamon
  • 2 cups (280g) ground graham crackers (about 2 sleeves)
  • 1/3 cup (70g) granulated sugar
  • 1/2 tsp cinnamon
  • pinch of salt
  • 1/2 cup (110g) unsalted butter
  • melted
  • 4 8oz blocks full fat cream cheese
  • room temp
  • 1 1/4 cup (255g) granulated sugar
  • 2 tbsp cornstarch
  • 3 large eggs + 1 egg yolk
  • room temp
  • 2 tsp vanilla bean paste
  • or 1 tbsp vanilla extract
  • 1 cup (250g) sour cream or full fat Greek yogurt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix the crumble ingredients: flour, brown sugar, cinnamon, salt, and cubed butter until crumbly.
  3. In another bowl, prepare the peach filling by tossing peach slices with melted butter, brown sugar, and cinnamon. Set aside.
  4. For the crust, combine ground graham crackers, granulated sugar, cinnamon, salt, and melted butter. Press the mixture into the bottom of the springform pan.
  5. In a mixing bowl, beat the cream cheese until smooth, then add sugar, cornstarch, eggs, vanilla, and sour cream, mixing until well combined.
  6. Pour the cheesecake batter over the graham cracker crust, then add the peach filling on top, followed by sprinkling the crumble mixture over the peaches.
  7. Bake in the preheated oven for 30-35 minutes until the cheesecake is set but still slightly jiggly in the center.
  8. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight before serving.

Notes
