- 1/2 cup (110g) unsalted butter
- melted
- 4 8oz blocks full fat cream cheese
- room temp
- 1 1/4 cup (255g) granulated sugar
- 2 tbsp cornstarch
- 3 large eggs + 1 egg yolk
- room temp
- 2 tsp vanilla bean paste
- or 1 tbsp vanilla extract
- 1 cup (250g) sour cream or full fat Greek yogurt
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, mix the crumble ingredients: flour, brown sugar, cinnamon, salt, and cubed butter until crumbly.
- In another bowl, prepare the peach filling by tossing peach slices with melted butter, brown sugar, and cinnamon. Set aside.
- For the crust, combine ground graham crackers, granulated sugar, cinnamon, salt, and melted butter. Press the mixture into the bottom of the springform pan.
- In a mixing bowl, beat the cream cheese until smooth, then add sugar, cornstarch, eggs, vanilla, and sour cream, mixing until well combined.
- Pour the cheesecake batter over the graham cracker crust, then add the peach filling on top, followed by sprinkling the crumble mixture over the peaches.
- Bake in the preheated oven for 30-35 minutes until the cheesecake is set but still slightly jiggly in the center.
- Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight before serving.
Notes
Ensure to use slightly underripe peaches to maintain their structure during baking. This dessert is best served chilled.
