- 2 cups all-purpose flour
- 1 cup unsalted butter

- 1 cup granulated sugar
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup fresh peaches
- diced
- 1/2 cup rolled oats

- 1/2 cup chopped pecans or walnuts

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the diced peaches, oats, and nuts (if using).
- Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Sprinkle cinnamon sugar over the top of each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, use fresh, ripe peaches. If peaches are out of season, frozen peaches work well; just be sure to thaw and drain excess moisture.
