These Peach Cobbler Egg Rolls are a delightful twist on the classic dessert, combining the sweet flavors of peaches with a crispy exterior, perfect for dipping in a creamy vanilla sauce.

- 2 cups chopped peaches – fresh

- 2 tablespoon salted butter – or use unsalted and add a pinch of salt
- ½ cup light brown sugar
- 4 teaspoon cornstarch
- ½ teaspoon ground cinnamon
- ½ teaspoon pure vanilla extract
- 10 egg roll wrappers
- 2 tablespoon water – for brushing
- vegetable oil – for frying
- powdered sugar – for dusting (optional)
- ¾ cup powdered sugar
- ½ teaspoon vanilla bean paste – or vanilla extract
- 2–3 tablespoons milk
- pinch salt
Instructions
- In a medium saucepan, melt the butter over medium heat. Add in chopped peaches, lemon juice, brown sugar, cornstarch, cinnamon, and vanilla extract. Stir to combine and cook for about 5-7 minutes until the mixture thickens. Remove from heat and let cool.
- Take an egg roll wrapper and place it on a clean surface with a corner pointing towards you. Add 2-3 tablespoons of the peach mixture in the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly, sealing the edges with a little water.
- In a deep skillet, heat vegetable oil over medium-high heat. Carefully place the egg rolls in the hot oil, frying until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
- For the dipping sauce, whisk together powdered sugar, vanilla bean paste, milk, and a pinch of salt until smooth. Adjust the thickness with more milk if necessary.
- Dust the fried egg rolls with powdered sugar if desired, and serve warm with the vanilla bean dipping sauce.
Notes
Feel free to use canned peaches for convenience, just make sure to drain them well. You can also experiment with the spices to suit your taste.
