  • 1 tablespoon (15 g) unsalted butter cold
  • 6 teaspoons (5 g) light brown sugar
  • 3 fresh peaches
  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2/3 cup (130 g) granulated sugar
  • 1/3 cup (75 g) unsalted butter at room temperature
  • 1 large egg at room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup (120 ml) buttermilk at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with non-stick cooking spray.
  2. In each muffin cup, place a small pat of cold unsalted butter and a teaspoon of light brown sugar.
  3. Peel and slice the fresh peaches, then arrange them on top of the butter and sugar mixture in each muffin cup.
  4. In a large bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
  5. In another bowl, cream together the granulated sugar and room temperature butter until light and fluffy.
  6. Beat in the egg and vanilla extract until well combined.
  7. Gradually add the dry ingredients into the wet mixture, alternating with the buttermilk, and mix until just combined.
  8. Spoon the batter evenly over the peach slices in the muffin tin.
  9. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow the cakes to cool for a few minutes before inverting them onto a wire rack.

Notes

Make sure to use ripe but firm peaches for the best results. The buttermilk adds moisture, but if you don’t have it, you can substitute with regular milk mixed with a teaspoon of vinegar.
