  • 3/4 cup all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 (3 ounce) package vanilla pudding mix
  • 3 Tablespoons butter
  • softened
  • 1 egg
  • 1/2 cup milk
  • 1 (28 ounce) can sliced peaches
  • drained (or 3 medium fresh peaches)
  • 1 (8 ounce) package cream cheese
  • softened
  • 1/2 cup granulated sugar
  • 3 Tablespoons reserved peach juice
  • 1 additional Tablespoon sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, salt, baking powder, and vanilla pudding mix. Add melted butter, egg, and milk to the dry ingredients and mix until smooth.
  3. Pour the mixture into a greased pie dish and bake for 20-25 minutes until the crust is golden brown. Let it cool.
  4. While the crust cools, prepare the peach layer. If using fresh peaches, peel and slice them. Drain canned peaches and set aside.
  5. In another bowl, beat the softened cream cheese, granulated sugar, and reserved peach juice until creamy and well combined.
  6. Spread the cream cheese mixture over the cooled crust, then layer the peaches on top.
  7. In a small bowl, combine the additional sugar and cinnamon, and sprinkle it over the peaches.
  8. Chill the pie in the refrigerator for at least 30 minutes before slicing and serving.

Notes

For a richer flavor, consider adding a dash of vanilla extract to the cream cheese mixture.
