- 3/4 cup all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 (3 ounce) package vanilla pudding mix
- 3 Tablespoons butter

- 1 egg
- 1/2 cup milk
- 1 (28 ounce) can sliced peaches
- drained (or 3 medium fresh peaches)
- 1 (8 ounce) package cream cheese
- softened
- 1/2 cup granulated sugar
- 3 Tablespoons reserved peach juice
- 1 additional Tablespoon sugar
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine flour, salt, baking powder, and vanilla pudding mix. Add melted butter, egg, and milk to the dry ingredients and mix until smooth.
- Pour the mixture into a greased pie dish and bake for 20-25 minutes until the crust is golden brown. Let it cool.
- While the crust cools, prepare the peach layer. If using fresh peaches, peel and slice them. Drain canned peaches and set aside.
- In another bowl, beat the softened cream cheese, granulated sugar, and reserved peach juice until creamy and well combined.
- Spread the cream cheese mixture over the cooled crust, then layer the peaches on top.
- In a small bowl, combine the additional sugar and cinnamon, and sprinkle it over the peaches.
- Chill the pie in the refrigerator for at least 30 minutes before slicing and serving.
Notes
For a richer flavor, consider adding a dash of vanilla extract to the cream cheese mixture.
