Description

Indulge in this rich and creamy Peanut Butter Cheesecake with a crunchy OREO crust, topped with chocolate ganache and optional Reese’s peanut butter cups.


Ingredients

  • 45 Oreos
  • 8 tablespoons salted butter melted
  • ½ cup heavy cream very cold
  • 24 ounces cream cheese softened at room temperature
  • 1 ½ cup powdered sugar
  • 1 cup creamy peanut butter
  • ¾ cup sour cream full fat room temperature
  • 1 teaspoon vanilla extract
  • 1 cup semi sweet chocolate chips coarsely chopped
  • ⅓ cup heavy whipping cream optional topping
  • Reese’s peanut butter cups coarsely chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Crush the Oreos into fine crumbs and mix with melted butter. Press the mixture into the bottom of a 9-inch springform pan to create the crust.
  3. In a mixing bowl, whip the cold heavy cream until stiff peaks form. Set aside.
  4. In another bowl, beat the cream cheese until smooth and creamy. Add powdered sugar, peanut butter, sour cream, and vanilla extract. Mix until well combined.
  5. Gently fold the whipped cream into the peanut butter mixture until fully incorporated.
  6. Pour the peanut butter filling over the OREO crust and smooth the top. Bake for 30 minutes until set. Allow to cool completely.
  7. For the chocolate ganache, heat heavy whipping cream in a saucepan over medium heat until just simmering. Pour it over chopped chocolate chips in a bowl and let sit for 5 minutes. Stir until smooth.
  8. Pour the chocolate ganache over the cooled cheesecake.
  9. Chill the cheesecake in the refrigerator for at least 4 hours or overnight before serving.
  10. Before serving, add optional toppings like Reese’s cups, chopped peanuts, and a drizzle of melted peanut butter.
