- 45 Oreos
- 8 tablespoons salted butter melted
- ½ cup heavy cream very cold
- 24 ounces cream cheese softened at room temperature
- 1 ½ cup powdered sugar
- 1 cup creamy peanut butter
- ¾ cup sour cream full fat room temperature
- 1 teaspoon vanilla extract
- 1 cup semi sweet chocolate chips coarsely chopped
- ⅓ cup heavy whipping cream optional topping
- Reese’s peanut butter cups coarsely chopped

Instructions
- Preheat the oven to 350°F (175°C).
- Crush the Oreos into fine crumbs and mix with melted butter. Press the mixture into the bottom of a 9-inch springform pan to create the crust.
- In a mixing bowl, whip the cold heavy cream until stiff peaks form. Set aside.
- In another bowl, beat the cream cheese until smooth and creamy. Add powdered sugar, peanut butter, sour cream, and vanilla extract. Mix until well combined.
- Gently fold the whipped cream into the peanut butter mixture until fully incorporated.
- Pour the peanut butter filling over the OREO crust and smooth the top. Bake for 30 minutes until set. Allow to cool completely.
- For the chocolate ganache, heat heavy whipping cream in a saucepan over medium heat until just simmering. Pour it over chopped chocolate chips in a bowl and let sit for 5 minutes. Stir until smooth.
- Pour the chocolate ganache over the cooled cheesecake.
- Chill the cheesecake in the refrigerator for at least 4 hours or overnight before serving.
- Before serving, add optional toppings like Reese’s cups, chopped peanuts, and a drizzle of melted peanut butter.
