1/2 cup vegetable oil

1 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

1 cup creamy peanut butter

1/2 cup powdered sugar

1/4 cup milk

1 cup chocolate chips

12 mini peanut butter cups


Instructions

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
  • In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, whisk together the vegetable oil, buttermilk, eggs, and vanilla extract.
  • Combine the wet and dry ingredients, mixing until just combined.
  • Fill each cupcake liner halfway with the batter and bake for 20-25 minutes until a toothpick comes out clean.
  • While the cupcakes cool, prepare the peanut butter filling by mixing the peanut butter, powdered sugar, and milk until smooth.
  • Once cooled, cut a small hole in the center of each cupcake and fill it with the peanut butter mixture.
  • Melt the chocolate chips and pour over the filled cupcakes.
  • Top each cupcake with a mini peanut butter cup.

Notes

For an extra touch, consider sprinkling some crushed peanuts on top after adding the mini peanut butter cups. Store leftovers in an airtight container at room temperature for up to 3 days.
