- 2 cups rolled oats certified gluten-free if needed
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 cups milk I use unsweetened almond milk
- 1/4 cup pure maple syrup
- 1 egg or 1 chia or flax egg for vegan
- 2 Tablespoons butter vegan butter or coconut oil melted
- 1 1/2 teaspoons vanilla extract
- 2 Tbsp. butter or vegan butter
- 1/4 cup pure maple syrup
- 1 cup pecans roughly chopped or whole
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, mix the rolled oats, baking powder, cinnamon, and salt.
- In another bowl, whisk together the milk, maple syrup, egg (or egg substitute), melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Transfer the mixture to the prepared baking dish and bake for 25-30 minutes, until set.
- While the oatmeal is baking, prepare the pecan topping by melting butter in a skillet, then adding maple syrup and pecans. Stir until the pecans are coated and heated through.
- Once the oatmeal is done, remove it from the oven and top with the pecan mixture.
- Let it cool slightly before serving. Enjoy warm!
Notes
You can make this dish vegan by using a chia or flax egg and coconut oil. For added sweetness, adjust the maple syrup to your taste.
