- 1 1/4 cups unsalted butter room temperature
- 1/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon kosher salt
- 1 cup unsalted butter
- 1 cup light corn syrup or maple syrup
- 1 1/4 cups light brown sugar packed
- 1/2 cup cornstarch
- 4 egg yolks
- 1/2 cup heavy cream
- 1 pound pecans roasted and roughly chopped
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the creamed mixture until well combined.
- Press the dough evenly into the bottom of the prepared baking dish. Bake for 15 minutes.
- In a saucepan, combine the butter, corn syrup (or maple syrup), brown sugar, corn starch, egg yolks, heavy cream, salt, and vanilla extract over medium heat until melted and smooth.
- Stir in the chopped pecans and pour the mixture over the pre-baked crust.
- Bake for an additional 30 minutes, or until the filling is set. Allow to cool completely before cutting into bars.
Notes
For an added touch, serve these bars with a scoop of vanilla ice cream or a dollop of whipped cream.
