- 13 whole graham crackers
- ¾ cup pecan halves
- 3 tablespoons light brown sugar
- ½ cup melted butter
- 24 ounces full-fat cream cheese softened
- 1 cup sour cream
- 1 cup sugar
- 4 large eggs
- 1 tablespoon all-purpose flour
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 1 ¾ cups pecan halves chopped
- ¾ cup light brown sugar
- ¾ cup heavy cream
- ½ cup butter
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, pulse graham crackers, ¾ cup pecan halves, 3 tablespoons light brown sugar, and melted butter until crumbly.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat softened cream cheese until smooth, then add sour cream, sugar, eggs, flour, vanilla extract, and salt. Mix until combined.
- Pour the cheesecake mixture over the crust in the springform pan and smooth the top.
- Bake for 30 minutes or until the center is set. Remove from oven and let cool.
- In a saucepan over medium heat, combine 1 ¾ cups chopped pecans, ¾ cup light brown sugar, heavy cream, butter, ground cinnamon, and salt. Bring to a boil, then reduce heat and simmer for 5-10 minutes until thickened.
- Pour the pecan pie topping over the cooled cheesecake and refrigerate for at least 4 hours before serving.
Notes
For an added touch, serve with whipped cream or a scoop of vanilla ice cream.
