Ingredients

  • 1.5 cups graham cracker crumbs
  • 6 tbsp unsalted butter
  • 1 pinch salt
  • 32 oz cream cheese
  • 1 cup granulated sugar
  • 0.5 cup sour cream
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup brown sugar
  • 4 tbsp unsalted butter
  • 0.5 cup heavy cream
  • 2 cups whole pecan halves

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix together graham cracker crumbs, melted butter, and a pinch of salt until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add in sour cream, eggs one at a time, and vanilla extract, mixing until fully combined.
  4. Pour the cheesecake filling into the prepared crust and smooth the top. Bake for 30 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.
  5. In a saucepan, combine brown sugar, unsalted butter, and heavy cream over medium heat. Stir until the mixture is bubbly and smooth. Remove from heat and fold in the roasted pecans.
  6. Once the cheesecake has cooled, spread the pecan topping evenly over the top. Chill in the refrigerator for at least 4 hours before serving.
