  • pounds cod fish fillets
  • skinless and boneless
  • 1 cup panko breadcrumbs
  • ½ cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 large eggs
  • 2 tbsp milk
  • ½ cup mayonnaise
  • 2 tbsp chopped dill pickles or sweet relish
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp chopped fresh dill or parsley
  • ½ tsp garlic powder
  • salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, mix together the panko breadcrumbs, flour, garlic powder, smoked paprika, salt, and black pepper.
  3. In another bowl, whisk together the eggs and milk until well combined.
  4. Dip each cod fillet first into the egg mixture, allowing excess to drip off, then coat it in the breadcrumb mixture, pressing gently to adhere.
  5. Place the coated fillets on the prepared baking sheet and spray lightly with cooking spray.
  6. Bake for 15-20 minutes, or until the fillets are golden brown and cooked through.
  7. While the fish is baking, prepare the tartar sauce by mixing together the mayonnaise, dill pickles, lemon juice, Dijon mustard, fresh dill (or parsley), garlic powder, salt, and pepper in a small bowl.
  8. Serve the crispy cod fillets with the tartar sauce on the side and enjoy!
