  • ends trimmed
  • sliced into 1/2-inch thick rounds or half-moons
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 0.5 cup Parmesan cheese grated
  • divided
  • 2 tbsp fresh parsley chopped
  • for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini, olive oil, garlic powder, salt, and black pepper. Toss until the zucchini is evenly coated.
  3. Spread the zucchini in a single layer on a baking sheet lined with parchment paper.
  4. Sprinkle half of the grated Parmesan cheese over the zucchini slices.
  5. Bake for 20 minutes, then remove from the oven and sprinkle the remaining Parmesan cheese on top.
