- 2 lbs zucchini about 3–4 medium
- ends trimmed
- sliced into 1/2-inch thick rounds or half-moons
- 2 tbsp olive oil
- 1 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp black pepper freshly ground
- 0.5 cup Parmesan cheese grated
- divided
- 2 tbsp fresh parsley chopped
- for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced zucchini, olive oil, garlic powder, salt, and black pepper. Toss until the zucchini is evenly coated.
- Spread the zucchini in a single layer on a baking sheet lined with parchment paper.
- Sprinkle half of the grated Parmesan cheese over the zucchini slices.
- Bake for 20 minutes, then remove from the oven and sprinkle the remaining Parmesan cheese on top.
- Return to the oven and bake for an additional 10 minutes, or until the zucchini is tender and the cheese is golden and bubbly.
- Garnish with chopped parsley before serving.
