- 1 cup granulated sugar
- ½ cup light brown sugar
- 2 teaspoons ground cinnamon

- ¼ teaspoon ground nutmeg
- 2 large eggs
- 1 can (15 oz) pure pumpkin
- ½ cup canola or vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine all the dry ingredients: flour, granulated sugar, brown sugar, cinnamon, baking soda, salt, cloves, and nutmeg.
- In another bowl, whisk together the eggs, pumpkin, oil, and vanilla extract until smooth.
- Fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
