- 1 cup diced pineapple
- ⅓ cup low-sodium soy sauce
- ¼ cup brown sugar packed
- 2 Tablespoons Worcestershire sauce
- 2 Tablespoons pineapple juice
- 1 Tablespoon cornstarch
- 1 Tablespoon olive oil
- 1 teaspoon fresh ginger
- 1 teaspoon minced garlic
- ¼ teaspoon crushed red pepper
Instructions
- Preheat your oven to 400°F (200°C) and prepare a sheet pan by lining it with parchment paper.
- In a large bowl, combine the chicken cubes, red and bell peppers, red onion, and diced pineapple.
- In a separate bowl, whisk together the soy sauce, brown sugar, Worcestershire sauce, pineapple juice, cornstarch, olive oil, ginger, garlic, and crushed red pepper until smooth.
- Pour the sauce over the chicken and vegetables, tossing everything to ensure it’s well coated.
- Spread the chicken mixture evenly on the prepared sheet pan.
