  • 1 Tablespoon extra virgin olive oil
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Black pepper
  • 3 jalapeños (seeded
  • ribs removed and roughly chopped)
  • 1 cup fresh cilantro leaves
  • 2 green onions (chopped (green parts only))
  • 2 cloves garlic (peeled)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 Tablespoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 Tablespoons extra virgin olive oil

Instructions

  1. In a large bowl, combine the garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat your oven to 400°F (200°C) or prepare a grill for medium-high heat.
  4. Remove the chicken from the marinade and place it on a baking sheet or grill. Cook for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  5. While the chicken is cooking, prepare the green sauce by blending jalapeños, cilantro, green onions, garlic, mayonnaise, Greek yogurt, lime juice, salt, black pepper, and olive oil until smooth.
  6. Once the chicken is cooked, let it rest for a few minutes, then serve it sliced with the green sauce drizzled on top.

Notes

For extra heat, leave some seeds in the jalapeños. The green sauce can be stored in an airtight container in the refrigerator for up to one week.
