This Pickle-Brined Chicken is juicy, flavorful, and incredibly easy to make. The pickle juice brine infuses the chicken with a tangy taste and keeps it tender during cooking.

- 4 (6 ounces each) boneless skinless chicken breasts
- 1–1/2 cups dill pickle juice
- 1–1/2 cups all-purpose flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 pinch cayenne pepper

- 1 tablespoon unsalted butter
Instructions
- In a large bowl, combine the chicken breasts with the dill pickle juice and marinate for at least 1 hour, or overnight for best results.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a separate bowl, mix the flour, garlic powder, onion powder, paprika, salt, pepper, and cayenne pepper.
- Remove the chicken from the brine and shake off excess liquid. Dredge each piece in the flour mixture, ensuring an even coating.
- Heat the olive oil and butter in a skillet over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden brown.
- Transfer the seared chicken to the prepared baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before slicing and serving.
Notes
Adjust the amount of cayenne pepper according to your spice preference. For extra crunch, consider baking on a wire rack set above the baking sheet.
