  • Shiitake mushrooms (thinly sliced)
  • Baby bok choy
  • Scallions
  • Fresh garlic
  • Fresh ginger
  • Vegetable broth
  • Soy sauce
  • Toasted sesame oil
  • Optional toppings (chili crisp
  • fried garlic

Instructions

  1. In a large pot, heat a drizzle of oil over medium heat. Add sliced shiitake mushrooms and sauté until they begin to soften.
  2. Add minced garlic and ginger, and cook for another minute until fragrant.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the frozen potstickers and cook according to package instructions, usually around 8-10 minutes.
  5. Stir in the baby bok choy and soy sauce, cooking for an additional 2-3 minutes until the bok choy is wilted.
  6. Serve hot, garnished with chopped green scallions and a drizzle of toasted sesame oil. Add optional toppings if desired.

Notes

Feel free to customize the soup with different types of dumplings or vegetables according to your taste. The broth can also be adjusted with more soy sauce or sesame oil to suit your preference.
