- ¼ cup unsalted butter
- 1 medium yellow onion diced
- 2 medium carrots peeled and diced
- 2 celery stalks diced
- 6 cloves garlic minced
- 1 tablespoon fresh thyme leaves or ½ teaspoon dried thyme
- ¼ cup all-purpose flour
- 2 ½ cups low sodium chicken broth
- ½ cup whole milk or heavy cream
- 3 cups shredded rotisserie chicken skin removed
- 1 ¼ cups frozen peas do not thaw
- Salt and pepper to taste
- 1 sheet frozen puff pastry thawed
- 1 large egg beaten + 1 tablespoon water (for egg wash)

Instructions
- In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Stir in the minced garlic and thyme, cooking for an additional minute.
- Sprinkle the flour over the vegetable mixture, stirring to combine, and cook for 1-2 minutes.
- Gradually whisk in the chicken broth and milk or cream, bringing the mixture to a simmer. Cook until thickened, about 5 minutes.
- Stir in the shredded chicken and frozen peas, then season with salt and pepper to taste. Remove from heat.
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface to fit your baking dish. Fill the dish with the chicken mixture, then cover with the puff pastry, sealing the edges securely.
- Cut a few slits in the top of the pastry to allow steam to escape. Brush with the egg wash.
- Bake for 25-30 minutes, or until the pastry is golden brown and flaky.
Notes
Feel free to add additional vegetables like mushrooms or corn if desired. Serve warm.
