Description

This Puff Pastry Chicken Pot Pie is a comforting dish filled with tender chicken and vegetables, all encased in a flaky puff pastry crust.


Ingredients

  • ¼ cup unsalted butter
  • 1 medium yellow onion diced
  • 2 medium carrots peeled and diced
  • 2 celery stalks diced
  • 6 cloves garlic minced
  • 1 tablespoon fresh thyme leaves or ½ teaspoon dried thyme
  • ¼ cup all-purpose flour
  • 2 ½ cups low sodium chicken broth
  • ½ cup whole milk or heavy cream
  • 3 cups shredded rotisserie chicken skin removed
  • 1 ¼ cups frozen peas do not thaw
  • Salt and pepper to taste
  • 1 sheet frozen puff pastry thawed
  • 1 large egg beaten + 1 tablespoon water (for egg wash)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes until the vegetables are softened.
  2. Stir in the minced garlic and thyme, cooking for an additional minute.
  3. Sprinkle the flour over the vegetable mixture, stirring to combine, and cook for 1-2 minutes.
  4. Gradually whisk in the chicken broth and milk or cream, bringing the mixture to a simmer. Cook until thickened, about 5 minutes.
  5. Stir in the shredded chicken and frozen peas, then season with salt and pepper to taste. Remove from heat.
  6. Preheat the oven to 400°F (200°C).
  7. Roll out the puff pastry on a lightly floured surface to fit your baking dish. Fill the dish with the chicken mixture, then cover with the puff pastry, sealing the edges securely.
  8. Cut a few slits in the top of the pastry to allow steam to escape. Brush with the egg wash.
  9. Bake for 25-30 minutes, or until the pastry is golden brown and flaky.

Notes

Feel free to add additional vegetables like mushrooms or corn if desired. Serve warm.
